2 days off means lots of cooking at the monkey house. I tend to eat a lot more on the days I work, and having good things to take with me is key. Here’s what we’ve been cooking…
Last night’s dinner was Chicken Enchiladas, recipe from Skinnytaste (I LOVE this site) can be found here http://www.skinnytaste.com/2010/02/chicken-enchiladas.html I made a few changes, based on what I had available, and mine came out to 175.5 calories, 6.96 gm fat, 12.39 gm fiber, or 3 points each. Absolutely delicious.

It doesn’t look terribly appetizing, but I can assure you, it was a keeper. Even the monkey liked this one! 1 cup is 77 calories, 2.78 gm fat, 2.38 gm fiber, or 1 point. Very filling, too. 😉
As for me, I’m doing pretty well. I’m at a total of 16 pounds down, and today marks the 1-month point. I ordered some clothes online last week, and without thinking got a pair of pants (lounge pants from old navy) in my size from the winter. They came last night. I tried them on, and they FELL OFF. Happy day. I’ll be exchanging them soon. I’m doing better with exercise, and have even fit in a run or 2 this week. I still need to work on being more consistent with that. I’ve discovered the joy of running with earphones on, just jamming to some music, and that’s helped a lot. Just plugging away at this, one day at a time, one pound at a time. Loving all the new recipes, but I seriously can’t wait to get the garden going so I can make them from home-grown ingredients!
I’m really tired of my pics but not my posts sending from my iPod… This is tonight’s dinner. Stuffed eggplant parmigiana 🙂 I hollowed out the halves of the eggplant, diced the pulp, sautéed it with diced onion, peppers, celery, mushroom, tomato, basil, and garlic til soft. Added a quarter cup of Italian breadcrumbs and a quarter cup of Parmesan cheese. Put all that back in the eggplant boats, topped with my homemade sauce (see pizza night post for details) and another half cup of Parmesan cheese, then baked at 350 for about half an hour. Very good. I think next time I’ll probably dice the whole eggplant, put all the filling in a baking pan, then top with sauce and cheese. The eggplant skin was a little harder to cut apart than I’d have liked, and I think it may work better casserole style. On the plus side, my 1/6th of the recipe serving was very filling, and satisfied my comfort-food need. 🙂 the monkey wasn’t as pleased with the finished product, but I LOVED watching her “sneak” the raw peppers, celery, and mushroom out of the bowl while I diced.

Slept a little later than I’d planned, and I woke up to 60 degrees outside! Got up & dressed, then decided to walk to Monkey’s school to pick her up instead of driving. Since we didn’t have anything important to do, when she said she wanted to take a walk, I was happy to oblige. We walked up to the shopping center, did a little browsing in the dollar store and the hardware store (checked out all the SEEDS, I can’t wait to get the garden in!!!) and played for a little bit with the toy train (also at the hardware store). Then we hit the Mexican restaurant for dinner. Yes, that could’ve been a disaster, but I did a FANTASTIC job of being sensible. Ordered shrimp fajitas, didn’t touch the chips or the tortillas, and just stuck to the grilled shrimp, onions, and peppers, with a bit of guacamole and lots of shredded lettuce. My estimates (thanks to http://www.dwlz.com) come to about 410 calories for the meal. Not so bad. 🙂 I have a real problem making myself go out to eat right about now. I like the local, family owned kind of places that generally don’t have websites or readily available nutrition info, and it makes me nervous. So I’m pretty proud that I went, made good choices, and stuck to the plan. Even though it’s national Margarita day, I didn’t even have one! 😉 We took the long way home and stopped at the playground for a bit, to slide on the slides–Monkey loved me climbing and sliding with her. In all, about 2 miles walked (yes, queen dork here drove it after to check). Now it’s time to play a game with her here, then bath and bed and get some housework done. 🙂 PERFECT DAY!
I forgot to take a picture, but I made some absolutely yummylicious soup last night that I feel the urge to brag about. When I finally sat down to total it all up, it came out to only 58.3 calories/cup. A 2 cup bowl paired with a salad was myperfect dinner last night, and I’m posting the recipe here at least partly so I don’t forget how I did it…
- 1 cup sweet peppers, chopped (I used a little each of red, yellow and orange)–25 calories per fitday
- 1/3 cup sweet onion, chopped–21 calories per fitday
- 1 rib celery, chopped–6 calories per fitday
- 1 bag frozen sweet corn (mine was steamfresh from birdseye, 70 cal/serving, 4 servings/bag=280 for the bag)
- 8 cups fat-free low sodium chicken broth–80 calories
- 1 tablespoon cornmeal–30 calories
- 2 tablespoons fat free sour cream–25 calories
- Fresh cilantro to taste ( I had about a quarter of a cup)
- Put the corn in the microwave for half the time on the directions
- In the meantime, saute the rest of the chopped veggies with a little spray over medium high heat in a soup pot til the onions start to go translucent and everything starts to get soft.
- Throw the corn in with the veggies, mix it around, still over medium high heat, til it just starts to get a little brown on it.
- Add the chicken broth and bring to a boil. Turn down to medium and simmer till all the veggies are cooked through.
- Use a slotted spoon to take most of the veggies out of the broth (This is to taste, but I wanted it mostly smooth and somewhat thick, so I did almost all) and put into the blender. Give the veggies a whirl til they are smooth, then add back into the soup.
- Mix well, then add the cornmeal (to thicken, not totally necessary) and sour cream. Add in a little chopped cilantro for color & flavor, and it’s ready to go.
Now, one of my favorite foods is the crab & corn chowder at Bonefish. I love that stuff, and used to eat it almost daily during my last pregnancy. This isn’t exactly the same, but it hit the right spot for me. I think next time I’ll plan ahead and have a little crabmeat around to add to the pot. It came out to about 8 cups of soup, 467 calories, 8.3 gm fat, and 10.7 gm fiber total. That’s 58.3 calories, 1 gm fat, and 1 gm fiber per cup, or 1 point/cup. Yummylicious. I’ll try to take a pretty picture of it before my leftovers later today 😉 Enjoy!!!
That leaves only 20 night shifts to go!!! Managed to bring some food home again tonight, putting me well below my upper limit (woohoo), AND finally made peace with a fact. That ICU nurse I always seem to have to give report to when I float down there? She’s just. plain. mean. I could do everything perfectly, and to her, I’d still be that “stupid med surg nurse,” never mind my surgical experience, all of the things I’ve learned over the years from WONDERFUL anesthesia providers about airway maintenance and the big picture. She doesn’t know or care about any of that. She is just unhappy. She will continue to be. Last time, I let her make me feel the same way. Last night, while I didn’t mention any names, I talked to another staff member about that experience. She knew exactly who it was immediately. This time, I kept that in mind when she started being such a witch…and instead of letting it get to me, I simply explained what I did and why, and thanked her with a smile for teaching me a different way of doing things. I left for home with a smile on my face, and ya know what? I bet she’s still pissed off 😀

All weekend, I’ve felt a bit hungry. Cravings have been crazy, and while I’ve fit them in and stayed on plan, I’ve been just at my upper limit every day. This morning, I was looking over the weekend & trying to determine the problem. I think I’ve got it figured out. I didn’t drink all of my water any of those days. This morning, I’m going to aim to get 2 of my liters in early, hopefully long enough before bedtime that I can sleep this afternoon. We’ll see if that improves the night. 169.2 this morning. Still a loss, but only 0.2. Hopefully, the scale fairy will visit by tomorrow for my “official” weigh in. 🙂 Have a fabulous day, y’all!
OH! One more thing! I needed a new mini goal, and set one last night. If I reach it, I’ll be out of the “overweight” BMI range and into the “normal” by the end of March 🙂 According to fitday, that’s just over 2 pounds a week. We’ll see…
It’s been a few days since I posted, but I haven’t given up, just been busy…
We tried to find out whether the grandbaby, Mo, will be a boy or a girl. She was shy, so that's still up in the air.
- We had a family pizza (the new way) night, and no one even cried or yelled when, just after the above (silly) picture was taken, this happened…
- We took a nice hike to one of our family’s favorite places, and scared ourselves with a few ghost stories. (Google Moonville, Ohio, that’s where this is)
And today, I drove the girlies to spend a night with friends before they return to their dad’s tomorrow. On the way, we had to drive through fast-food alley. A MAJOR cheeseburger craving hit me. Not just a little McD cheeseburger, but a big, meaty, burger. So I started planning for what I’d have for my afternoon meal when I got home, and was so excited I couldn’t stop talking about it. This is what I came up with…
That is a low-carb tortilla, with 2 tablespoons roasted garlic hummus, 2 leaves of romaine, some tomato, some pickle, a Morningstar farms grillers patty, and 1/4 cup of my WW recipe cheese soup, blended into cheese sauce. That, my friends, is my cheeseburger craving, satisfied for only 378 calories. A lot for one meal? Yes, for me. Better than the alternative and still totally on plan for today? Yup. 🙂 I love when I can do that!
So that’s about it from here at the monkey house. 2 more days til I officially weigh in again. I haven’t been seeing much in my daily weighs, but I can see my clothes are fitting a little better, people have commented that my face looks slimmer (and someone commented on my skin looking better, too, lol), and I feel PHENOMENAL. 🙂 That’s the point, right?
